Ingredients
- Rice: 2 cups of Basmati rice, washed and soaked for 30 minutes
- Vegetables:
- 1 cup of mixed vegetables (carrots, peas, green beans, and potatoes)
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- Spices:
- 2-3 cloves
- 2-3 green cardamom pods
- 1-2 bay leaves
- 1 small cinnamon stick
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- Others:
- 2-3 tbsp ghee or vegetable oil
- 4 cups of water
- Fresh coriander leaves for garnish
Instructions
Preparation:
- Wash the Basmati rice thoroughly and soak it in water for 30 minutes. This helps in reducing the cooking time and ensures that the rice grains remain separate.
Cooking the Vegetables:
- Heat the ghee or oil in a large, deep pan over medium heat.
- Add the cumin seeds and let them splutter.
- Add the sliced onions and sauté until they turn golden brown.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the mixed vegetables and stir-fry for a few minutes.
Adding Spices:
- Add the cloves, cardamom pods, bay leaves, and cinnamon stick to the pan.
- Add turmeric powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
Cooking the Rice:
- Drain the soaked rice and add it to the pan. Gently mix the rice with the vegetables and spices to ensure it is well-coated.
- Add 4 cups of water and bring it to a boil.
- Reduce the heat to low, cover the pan with a lid, and let it simmer for about 15-20 minutes or until the rice is fully cooked and the water is absorbed.
Finishing Touches:
- Once the rice is cooked, remove the pan from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice gently with a fork to separate the grains.
- Garnish with fresh coriander leaves.
Serving Suggestions
Pulao can be served with raita (yogurt sauce), a simple salad, or a side of your favorite curry. It's also delicious on its own with a squeeze of lemon juice.
