Aloo Gosht Recipe

Introduction

Aloo Gosht is a traditional Pakistani and North Indian dish that combines tender meat (usually mutton or lamb) with potatoes in a rich, flavorful gravy. This comforting dish is perfect for family dinners or special occasions. Here's a detailed recipe to help you prepare this delicious meal.

Ingredients

  • Meat: 500g mutton or lamb, cut into medium pieces
  • Potatoes: 2 large, peeled and cut into chunks
  • Onions: 2 medium, finely chopped
  • Tomatoes: 2 medium, pureed
  • Yogurt: 1/2 cup, whisked
  • Ginger-garlic paste: 2 tablespoons
  • Green chilies: 2, slit (optional)
  • Fresh coriander leaves: A handful, chopped
  • Cooking oil: 4 tablespoons
  • Water: 2-3 cups


Spices:

  • Cumin seeds: 1 teaspoon
  • Bay leaves: 2
  • Cinnamon stick: 1 inch
  • Black cardamom: 1
  • Green cardamoms: 2
  • Cloves: 4
  • Black peppercorns: 6-8
  • Turmeric powder: 1/2 teaspoon
  • Red chili powder: 1 teaspoon
  • Coriander powder: 2 teaspoons
  • Garam masala powder: 1 teaspoon
  • Salt: To taste


Instructions

  1. Prepare the Meat:

    • Wash the mutton or lamb pieces thoroughly and set aside to drain.
  2. Cook the Onions and Spices:

    • Heat the oil in a large pot or pressure cooker over medium heat.
    • Add the cumin seeds, bay leaves, cinnamon stick, black cardamom, green cardamoms, cloves, and black peppercorns. Sauté for a minute until fragrant.
    • Add the chopped onions and sauté until golden brown.
  3. Add the Ginger-Garlic Paste:

    • Add the ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.
  4. Add the Tomatoes and Spices:

    • Add the tomato puree and cook until the oil separates from the mixture.
    • Add turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes, stirring continuously.
  5. Cook the Meat:

    • Add the mutton or lamb pieces to the pot. Sauté for about 5-7 minutes until the meat is well coated with the masala.
    • Add the whisked yogurt and cook for another 5 minutes, stirring occasionally.
  6. Add Water and Potatoes:

    • Add 2-3 cups of water, depending on how much gravy you want. Stir well.
    • If using a pressure cooker, cook for about 15-20 minutes or until the meat is tender. If using a pot, cover and cook on low heat for about 1-1.5 hours, or until the meat is tender.
    • Add the potato chunks and green chilies. Cook until the potatoes are done and the gravy reaches your desired consistency.
  7. Finish and Serve:

    • Sprinkle garam masala powder and mix well.
    • Garnish with fresh coriander leaves.
    • Serve hot with naan, roti, or steamed rice.


Tips

  • For a richer flavor, you can add a few tablespoons of ghee along with the oil.
  • Adjust the spice levels according to your preference.
  • If you like a thicker gravy, cook uncovered for a few minutes after adding the potatoes to let the water evaporate.
