Aloo Gosht Recipe
Introduction
Aloo Gosht is a traditional Pakistani and North Indian dish that combines tender meat (usually mutton or lamb) with potatoes in a rich, flavorful gravy. This comforting dish is perfect for family dinners or special occasions. Here's a detailed recipe to help you prepare this delicious meal.
Ingredients
- Meat: 500g mutton or lamb, cut into medium pieces
- Potatoes: 2 large, peeled and cut into chunks
- Onions: 2 medium, finely chopped
- Tomatoes: 2 medium, pureed
- Yogurt: 1/2 cup, whisked
- Ginger-garlic paste: 2 tablespoons
- Green chilies: 2, slit (optional)
- Fresh coriander leaves: A handful, chopped
- Cooking oil: 4 tablespoons
- Water: 2-3 cups
Spices:
- Cumin seeds: 1 teaspoon
- Bay leaves: 2
- Cinnamon stick: 1 inch
- Black cardamom: 1
- Green cardamoms: 2
- Cloves: 4
- Black peppercorns: 6-8
- Turmeric powder: 1/2 teaspoon
- Red chili powder: 1 teaspoon
- Coriander powder: 2 teaspoons
- Garam masala powder: 1 teaspoon
- Salt: To taste
Instructions
Prepare the Meat:
- Wash the mutton or lamb pieces thoroughly and set aside to drain.
Cook the Onions and Spices:
- Heat the oil in a large pot or pressure cooker over medium heat.
- Add the cumin seeds, bay leaves, cinnamon stick, black cardamom, green cardamoms, cloves, and black peppercorns. Sauté for a minute until fragrant.
- Add the chopped onions and sauté until golden brown.
Add the Ginger-Garlic Paste:
- Add the ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.
Add the Tomatoes and Spices:
- Add the tomato puree and cook until the oil separates from the mixture.
- Add turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes, stirring continuously.
Cook the Meat:
- Add the mutton or lamb pieces to the pot. Sauté for about 5-7 minutes until the meat is well coated with the masala.
- Add the whisked yogurt and cook for another 5 minutes, stirring occasionally.
Add Water and Potatoes:
- Add 2-3 cups of water, depending on how much gravy you want. Stir well.
- If using a pressure cooker, cook for about 15-20 minutes or until the meat is tender. If using a pot, cover and cook on low heat for about 1-1.5 hours, or until the meat is tender.
- Add the potato chunks and green chilies. Cook until the potatoes are done and the gravy reaches your desired consistency.
Finish and Serve:
- Sprinkle garam masala powder and mix well.
- Garnish with fresh coriander leaves.
- Serve hot with naan, roti, or steamed rice.
Tips
- For a richer flavor, you can add a few tablespoons of ghee along with the oil.
- Adjust the spice levels according to your preference.
- If you like a thicker gravy, cook uncovered for a few minutes after adding the potatoes to let the water evaporate.
